Quick Stir-Fry Breakfast (or anytime meal)
1/2 zucchini (chopped in small cubes)
1/4 lemon
1/4 inch ginger (chopped fine)
1/2 cup spinach
1/2 cup brown rice (yesterday's brown rice is just fine)
1 celery stalk (small pieces)
1/4 cup mushrooms (used baby bella, any type is good)
1 scallion (chopped)
1/4 cup (or so) of cilantro (chopped)
1 tablespoon nutritional yeast
Soy sauce or Bragg's aminos
Pepper
Optional chili paste, sriracha
Small amount of olive oil
Use Non-stick wok
METHOD
Heat the wok
Add small amount of olive oil
Add scallions and ginger
Add zucchini,spinach, celery, mushroom, cilantro, nutritional yeast
Saute for a few minutes
Add a small amount of soy or Bragg's
Squeeze lemon juice into pot
Add rice
Add a bit more soy/Bragg's if needed
Heat for a few minutes until hot
Add additional spice (sriracha, chili paste)
Serve hot and enjoy!
You can substitute almost any vegetables for this basic dish. This can be served at any time in the day that you are looking for a delicious, low calorie, high nutrient quick meal.
