Quick stir-fry breakfast (or anytime meal)

Ingredients

  • 1/2 zucchini (chopped in small cubes)
  • 1/4 lemon
  • 1/4 inch ginger (chopped fine)
  • 1/2 cup spinach
  • 1/2 cup brown rice (yesterday's brown rice is just fine)
  • 1 celery stalk (small pieces)
  • 1/4 cup mushrooms (used baby bella, any type is good)
  • 1 scallion (chopped)
  • 1/4 cup (or so) of cilantro (chopped)
  • 1 tablespoon nutritional yeast
  • Soy sauce or Bragg's aminos
  • Pepper
  • Optional chili paste, sriracha 
  • Small amount of olive oil
  • Use Non-stick wok

METHOD

  • Heat the wok
  • Add small amount of olive oil
  • Add scallions and ginger
  • Add zucchini,spinach, celery, mushroom, cilantro, nutritional yeast
  • Saute for a few minutes
  • Add a small amount of soy or Bragg's
  • Squeeze lemon juice into pot
  • Add rice
  • Add a bit more soy/Bragg's if needed
  • Heat for a few minutes until hot
  • Add additional spice (sriracha, chili paste)
  • Serve hot and enjoy!

You can substitute almost any vegetables for this basic dish.  This can be served at any time in the day that you are looking for a delicious, low calorie, high nutrient quick meal.
